What would you choose for Valentine’s Day? Something sweet or something savory? Today I’m sharing a recipe for one of my favorite savory Valentine’s Day treats, Roasted Heart Potatoes with Rosemary for Two.
These savory potatoes are a perfect treat for your valentine. You can add them to any meal, breakfast, lunch or dinner or as a late-night snack while you watch your favorite romantic comedy with your sweetie.
And if you’re celebrating Galentine’s Day with your besties, double or triple the recipe as needed. Your girlfriends will love this savory treat.
Recipe for Roasted Heart Potatoes with Rosemary for Two
Ingredients
- 3 large Russet potatoes
- 2 T Olive oil
- 1 t Garlic Powder
- 1/2 t Onion Powder
- 1/4 t Rosemary
- Salt and Pepper to taste
Directions
- Preheat oven to 400 degrees Fahrenheit
- Peel & slice potatoes lengthwise (no more than 1/4″) to create a large surface for creating heart shapes.
- Cut heart shapes into the potatoes with cookie cutters.
- Place potatoes in a bowl of water for 5 minutes.
- Parboil potatoes 3-4 minutes, do not boil too long.
- Place potatoes on a foil lined baking sheet.
- Season potatoes to taste with onion powder, garlic powder and rosemary (be careful not to use too much rosemary).
- Add salt and pepper to taste.
- Add olive oil to potatoes (both sides).
- Roast potatoes 10-12 minute on one side, flip and roast potatoes another 10-12 minutes until golden brown.
- Cool slightly and enjoy with your valentine!
Notes
If you decide to make several sizes of hearts, I recommend grouping the hearts by size and roasting them on separate baking sheets. This will allow you to remove the potatoes as they brown and not overcook the smaller sized heart potatoes.
